Sake (Nihonshu) – The soul of Japan in every bottle
Discover the fascinating world of sake in our selection, known in its homeland as Nihonshu . Sake is far more than just a beverage; it is considered the official national drink ( Kokushu ) and is inextricably linked to Japan's history, culture, and spiritual heritage. Although often referred to as "rice wine" in the West, its brewing process is more similar to that of beer, as the rice starch must first be converted into sugar by the koji mold ( Aspergillus oryzae ) before the yeast can produce alcohol.
The art of brewing: rice, water, and craftsmanship
The quality of a premium sake is largely determined by four basic ingredients: special brewing rice ( sakamai ), pure spring water, koji, and yeast. The Yamada Nishiki rice variety is particularly prized and often referred to as the "Grand Cru" among brewing rice. A crucial characteristic for classification is the polishing ratio ( seimai buai ). The more of the outer layer of the rice grain is removed, the finer and more aromatic the final product becomes.
Our sake categories at a glance
In our online shop you will find a carefully curated selection of different styles:
- Junmai-shu: Pure rice sake without the addition of brewer's alcohol. It is often characterized by a full body and strong, earthy aromas.
- Ginjo & Daiginjo: These premium wines are made from highly polished rice (at least 60% and 50% respectively) and are slowly fermented at low temperatures. The result is elegant wines with fruity and floral notes ( Ginjoka ).
- Honjozo: A style where a small amount of brewer's alcohol is added to intensify the flavors and create a lighter mouthfeel.
- Specialties: Discover also Nigori (cloudy sake), Koshu (aged sake) or sparkling Happo-shu .
Tip for enjoyment: The right temperature
Sake is one of the world's most versatile beverages when it comes to serving temperature. While floral Ginjo sakes typically reach their full potential when slightly chilled , robust Junmai or Yamahai styles can be enjoyed at room temperature or even warm ( Kanzake ), which accentuates their umami notes. Whether served in a traditional ochoko cup, a wooden masu box, or a modern wine glass, sake enhances any dining experience.
