However, the roots of the Kanosuke Distillery go back much further. The Yamanashi family, the owners of the distillery, have been involved in the production of shochu, a traditional Japanese spirit, for generations. Their many years of experience and deep knowledge of the craft of distilling enabled them to lay a solid foundation for the establishment of the Kanosuke Distillery.

With the aim of producing high-quality whisky, the Yamanashi family began by growing barley in their own fields and using locally sourced water known for its purity and quality. They chose traditional production methods and combined them with modern approaches to create unique and flavorful whiskies.

The distillery prides itself on controlling every stage of the production process, from the selection of barley to the storage of casks.
