The White Oak Distillery (Eigashima Shuzo) in the city of Akashi holds a special place in history: it possesses the oldest official license to produce whisky in Japan, granted back in 1919. What makes Akashi special is its seasonal production: As the company is originally a traditional sake and shochu producer, whisky is only distilled during the spring and summer months. The artisanal direction is often in the hands of a toji (sake brewmaster) , which is also reflected in the use of special yeast starters ( shubo ). Thanks to the mild, maritime climate with high average temperatures, the whisky matures significantly faster in Akashi than in Scotland, giving it remarkable depth even at a young age.
